Maybe something along these lines
Motor

I like this motor for sure! It seems to check all the boxes!

Yeah that one looks pretty nice! Maybe you could even put a 8x6 prop in there, but is not necessary. These look pretty nice too:

You could use these with an 8x4 or 8x5 prop as long as you test it on the bench first with a watt meter.

I'm liking that 2836 motor you linked! And I noticed today that the NTM 2836 you recommended before is on sale for $13.99. (EDIT: Not the same motor you linked before but I still like it!)

I also noticed HK has a 3542 motor on sale for $15.99.

So based on my own searching and everyone's recommendations I've narrowed my options down to the four motors linked below. Please let me know what you guys think!

That 3542 motor is soooo big. I wouldn't recommend that one...

Okay. Noted...

How about the 28-36 2200kv motor? Their prop test data shows a 6x4 on 3s pulling 28amps. The max amperage rating on that motor is 50amps. I feel that motor would be able to swing a 7x5 or maybe even an 8x4 and still stay under 50amps. Of course the higher kv is going to be less efficient than the others but at this point I've pretty much decided that I'm not going to be able to get anything efficient in the power range I'm looking for while limited to an eight inch prop.

What do you think?

Uhmmm. Didn't you have only a 30 amps esc? I think 50 amps of power is a lot of power for a plane this size. How much experience do you have? Can you also send some more pictures of the plane, and the motor mount too?

My largest ESC is 40amps. I already figured I'd need to order a larger ESC if I get this motor.

I have been flying and scratch building for awhile and have built many RC aircraft. I've built and flown everything from electric fixed wing to big AP multi rotors to mini quads to fixed wing nitro. I also designed and produced the consumer version of the DR1 model. On top of all that I have an electronics and fabrication background with over twenty years experience in the field so I have no problem understanding simple electronics principles like P/IE.

I have a lot of experience in the hobby; just not so much with FPV.

The main reason I threw the motor question out there is to look for more options based on user experience since I have found it difficult trying to find a motor based on a specific size prop. Generally my experience has been that you buy the motor best suited for your application then buy the correct prop for that motor. So the whole experience of buying a motor based on prop size has been a bit backwards to me. That's why I'm looking for opinions and more motor options.

Below are some pictures of the plane with the main wing just sitting on it. I still haven't made any tail feathers for it yet but they are on my to-do list for this week. When I got the fuse the motor mount was broken off and I designed and 3D printed one myself so it can be modified or redesigned as needed. I laid out the meter stick along the bottom for size comparison. The main wing is 1300mm.

If I remeber correctly the NTM motors you need to order the prop adapters with them. So if it is a matter of money take that into account. As noted above the 3542 motor I would stay away from as that ways almost three times as much as the others. Let us also know if you need help with the OSD

I went ahead and ordered the motor you suggested and a couple 8X4 props so now that's out of the way. Thanks for the suggestion!

I kinda railroaded my own thread with the motor question but now things are back on track and I'm getting closer to having an OSD.

I got the MinimOSD and programmer in today so I'll probably start messing with it tomorrow. If I have any questions I'll be sure to ask!

Thanks again to everyone for all the feedback so far!
