When you create the model you should be able to pick a delta template (if you have a Taranis with the original firmware) or select a delta/wing in the new model wizard (if you have a Taranis Plus or a Taranis upgraded to OpenTX 2.0.x).
If you want to do it yourself, you'll have to set up a mix for each elevon servo that combines (for example) 50% of the aileron with 50% of the elevator - the exact amount can vary and will depend on your flying style, but 50/50 is a good starting point.

Well first of all, WELCOME TO THE FAMILY!
That sounds like a sound option, you should also get in to open TX and pay with the settings for a bit to familiarize yourself with the programming.
