Adjust kv up?

So this video shows that you can make a 4s motor run 6s by adjusting motor output level in Betaflight. Could you adjust a motor to a higher kv and then run it on a lower voltage ie an 1105 5000kv 4s on 2 inch up to like 6500kv 3s on 2 inch?

Yes, but it would require rewinding the motor. The video you linked states at 0:40 that reconfiguring in Betaflight works for decreasing the effective kV but not increasing it.
