I didn't read through all of it but could someone give me the short version of why you would do this? Is it just for multicopters or can plane and heli pilots benefit from this?

No it is a Firmware that was made specifically for Multicopters but there is no reason that it wouldn't work with any kind of application.

Interesting read !! here comes the but... But I thought the Turnigy plush 18a esc are already programmed to take the higher PWN rate so what's the point. I guess is your quad or tri bounces like the videos then a must but if you get smooth flight why bother?
being a fiddler I might get hold of some cheep HK esc and have a go just for the fun of it.

Yeah too bad they don't make the CC board anymore. And they have no idea when they are going to finish developing the new CC3D board... sad face. I so want one.

Yeah i didn't either. They just anounced it yesterday its also nicknamed the revolution (revo). I'll either have to wait till it comes out or try to pick one up used, which seems to be almost imposible. Or I could dish out some extra cash and go with something like the quadrino. I'd like someones opinion on that accually which is better the openpilot CC or the Quadrino.

What I took away from it was that it effects the output change rate. So instead of going from 10% to 50% over say 1 second (no idea how long its really takes) it just changes to the new output speed.

No sorry for the Quadrino boards, no price i can find for the CC3D.
I found some for about 120usd I dont know what that is in the UK.

I also was looking more into the the RapidESC for the plushes and it looks like only the older plushes are the ones that you can flash. but i guess ill verify that when I order mine, whenever they come back into stock.
