I got to Model Setup > Protocol and I get this screen. No option for "Internal"...

There it is! Tab down to the PPM and change it. Your Tx it telling Rx to output PPM. May need to rebind for the change to take effect.

If I select the PPM on the line right after it says Proto, I can cycle through and change PPM to XJT, DSM2, PPM16, PPMSIM, MULTI, or SBUS. Which one of those do I want?

I’d try it to see if it works now. If not tab down to flysky and see what the options are. Look for flysky2 & try it. You may need to rebind the Rx to get it to change.

You only need to do that for multirotors.
I've used Spektrum for over 8years (25+models) and NEVER need to do that for fixed wing.

Was just wondering if maybe that was / would keep that particular esc from thinking its to high to arm. Other then that it would just squeeze in the resolution a bit.

No, actually you need AHFDS 2. The IA8 will not respond to AHFDS
