On a standard plane, (one with a functional tail the fitment of Elevons on the main wing is not normally advised as it can lead to great maneuverability with extreme tendencies for being overly sensitive to control input making it almost unflyable at high speed or uncontrollable at low speed if controls are dialed down for high speed flight.
During slow speed landings drag induced stalls can be an issue as can Stall induced control reversal. Not pushing the flight envelope would be safest option for elevons used as you have asked.
The stresses on the fuselage are not much different to normal flight.
On flying wings and fixed foreplane Canards the use of elevons is quite effective but not completely free of Aerodynamic compromises.
As for the question of "Would You", Yeah why not! Though I would not do it on anything new or shop bought but rather on a plane with one foot in the trash!
