As CrashRecovery said, it's all about how complicated you want to make it. That applies directly to the transmitter choice. I think in their supplemental, they have to use a "programmable" transmitter (I use that term instead of "high end" as it's more descriptive and the reason why they cost more) due to the fact that they're trying to show the more complicated, optional settings.
I actually haven't watched the video itself, but I suspect they're going to cover how to setup flaps, maybe even differential ailerons, and such, which requires something more than a 4 channel TX will be capable of.
I actually think that's one of the great things about the Storch! I built the FT Cruiser because I wanted a "full house" plane with elevator, rudder, ailerons, and flaps. Talk about complicated, you can really make that complicated with differential thrust, differential ailerons, etc. Yet, my first configuration was super simple with Y servo connectors for the motors.
Anyway, I think the Storch is a great option that's even easier to build than the Cruiser (1 vs 2 powerpods) for a "full house" plane. Heck, I still haven't installed the flap servos on my Cruiser because it flies so well without them. From what I saw of the Storch, it's the same thing.
