Do you guys think 200% is about right for running an electric 60 equivalent? That would put my wing span at around 80".

Weight/ wingloading/power loading is more important than physical size. unless your first flights are tossing it off cliffs.

So here is my plan, or should I say my plan for a plan? Finish a couple of things I have hanging to clear my mind and bench space, collect the things needed, start designing, then somewhere I will need to start seeing these parts for real and I'll start cutting. From there of course things will be iterative going back and forth from design to build until I think I have it.

Should look like the simple stick but around twice as large.

I’m sure you could find them pretty much anywhere. Even Ebay

Except for the rubber bands used in furniture protection, suspect that the ones you find are old and oxidized. Means you won't get holding power and expect them break randomly. Definitely not the Staples ones sitting in the bag in the store.
