As a leased thing, no. On the other hand, the military is always looking to lower parts counts and fulfill different missions. The airforce has used several airplanes that the left and right-wing is the same striped down. It only becomes left or right when built up to install.
Also you are forgetting how much modern aircraft rely on the synergy between physical parts and the avionics electronics and software. Changing physical parts like wings would radically alter handling, you would have to totally change the software etc every time you reconfigured the plane.
You could make a cool model in this way, with a core control and propulsion set up, that could have different wings added for different flying. Get the foamboard out!
