I use foamcoare all the time to build model railroad structures. To avoid having to hold pieces in alignment while the glue cools, use canned air like you use to blow the cornchips out of your keyboard. Warning, this technique can burn you from cold! Hold the can upside down so the liquid air comes out. A little squirt on a part of the hot glue will cool it instantly and it will hold while the rest cools.
