So I tried to fly the ft simple cub on skis. It did not go to plan at all.

Your floats are set up odd from what I have experienced ( they're nosedown). They should be the same angle of incidence as the wing and some bit of rudder on the back would help during transition from water to air. Or more rudder on the airplane like some alaskan floatplanes.

On full sized cubs, you get aerodynamic advantages that increase performance from proper installation
