Help! Power loss

I recently got my Simple Cub flying with a FT 2212/1050 kV motor, Tattu 3s/45c/1300 mAh battery, & an FT 40 amp ESC. When throttle is advanced beyond 50% (as in a take-off), motor slows down and "sags." At 75-80% throttle, motor speeds up again. Whenever throttle passes through the 50-75% range, power goes down/RPM drops. Too soon in the flight for over-heated ESC. What's happening? How can this be corrected?

To calibrate the ESC:
  1. Remove your prop
  2. turn the Xmitter on
  3. bring the left stick to full throttle
  4. plug the battery into the ESC
  5. wait for the beep
  6. lower the left stick to minimum throttle
  7. wait for the beeps

Make sure the Tx is airplane mode. What you are describing sounds like what happens when the Tx is helli mode.
