Hi, I have a receiver from my watt-age p51. it currently runs on a 8.4v nimh battery. If I buy a new speed controller and motor will my receiver be able to handle the 11.1 3cell lipo i want to purchase with the new motor/esc?

The esc will regulate the power from 11.1 to around 5 volts to feed the electronics, only the motor will see 11.1 volts. Most brands of receiver can only handle a max 9 volts. Systems typically run around 5 volts. Notice that most servos are rated at 4.8 and 6 volts unless you are using the high voltage servos which are usually very expensive still.
