your likely to spend more foam/etc to pull off a pusher then a tractor.. unless your creating a flying wing, the pusher will almost assuredly be heavier for similar wing/tail/etc sizes.
A pusher is likely to 'bounce' better than a tractor.
I have never yet broken a high mounted pusher prop. Perhaps any weight penalty for such a layout is the price you pay to benefit "fitness for purpose".
The best you could build out of foam board might be the tiny trainer. There are a lot of older designs that might be better, but they would most likely be better suited for different materials.
Sig sinorita, sig kadet, gws tiger moth (if you can find one), horizon 3ch micro champ, and nextstar are all fantastic trainers that I've either flown or been trained on. I'm partial to the gws tiger moth and sig sinorita though.
