Advice needed on DIY Builds that can be run on 2s 2000mah

Hi,

I've built the Pietenpol, Se5 and Spitfire and the recommended minimum battery for these DIY's is a 3s 800mah which I don't have (yet).

My question is, are there any DIY builds that can run off 2s 2000mah batteries?

I have 30a ESC's, 9g Servo's and the following motors:
2205 1000kv
2205 2000kv
2216 2600kv

I'm going to try to do my own thrust calculations but as I'm new to this, any advice will be greatly appreciated.

Exactly what motors are they?
Some 2216 2600kV have powers as high as 750 Watts but not off a 2s!
