I don't usually post in "UAVs", but I thought this was pretty cool...
Some researchers at the University of Cambridge Computer Laboratory are working out how to fly a simple RC plane using a smartphone as the controller. I know it sounds silly, since there are boards out there that already do this job faster and cheaper, but they're interested in using all the OTHER capabilities a smartphone has as well (camera, wifi, bluetooth, GPS, etc).
It's pretty cool the way they use the audio-out jack as a pulse-generator to control the servos, and the guy does a great job of explaining it, as well as multiplexing channels!
Test flight with Captain Buzz controlling!
