Planning on building a GRT biplane from scratch. Plans have wing span of 56" , if I stretch it to 62" including the ailerons (ailerons shown only on lower wing) will that screw it up or make it easier to fly at lower speeds?

Increasing wing span is pretty much never a problem. Full scale gliders do it all the time with bolt on wing tips ;)

As for speed, its not going to do much for that either. To be able to fly slower, you generally need a thicker wing, or a wider wing, or of course, flaps. Oh hey, its a biplane, so more wings (triplane) would also help :) A longer wing will give you better glide ratio (or more efficiency in your case), higher lifting capability, but will do nothing about the speeds.
