hi , I just brought a EMAX GT2215/09 1180KV Brushless Motor( https://store.flitetest.com/emax-gt2215-09-1180kv-brushless-motor-emx-mt-0409/p694266 ) . The maximum power consumption is 26 A . My ESC , is a 25 A one which has burst current of 35 A . Is this motor - ESC combination good , or The ESC will overheat ?

As long as you don't go over a 10x6 prop on a 3s battery you should be fine with the 25a ESC. I run the same motor with Emax 30a ESC and confirmed via a watt meter that max draw is is about 27a on a 10x4.5 with my ESC timing set to Mid-Low 8°. To be safe I would make sure your ESC gets good airflow over it.
