I use Hobbywing Skywalker and Hobbyking Plush ESC’s. They are both good quality and mine have survived many crashes. They are also pre set up for fixed wing use, with low voltage cut out that either blips the throttle or reduces it when you hit 3.5v per cell so you can never over discharge your lipo.
All those “SimonK” type ones are usually poor quality components with firmware designed for quads, which will let you keep flying until the battery dies completely, that’s what the firmware was designed to de, remove the overload protection and maximise current delivery. That’s fine in a race quad but not much use in a plane.
Amazon and EBay are not good sources of RC components IMO, help yourself out by using a hobby specialist online instead.
