Total FPV noob question: can I use a FatShark system to fly FPV and record at the same time?

You will be better off with an onboard camera, in terms of quality.

When using the internal receiver on the FatSharks, the Audio / Video input changes to AV Out. So all you need is a DVR. Is this what you're asking or have I got my wires crossed
