My question is, Should I give the wings some Dihedral, or should I leave them as they would be on a scale aircraft?

You will have a much easier to control plane with a little dihedral - but if you're looking to make an aerobatic monster to throw all over the sky in crazy flips and rolls, then flat will help out.
