Elevons aren't much different from using a separate elevator and ailerons, I don't think the rudder will do a whole lot on this plane, you probably won't need it for flying. Once you're comfortable with the plane mess around with the rudder a little bit to see how it reacts.

Both M2000 painted. The large one is ready for the air. The small one just needs pushrods.
Hope they both fly as good as they look. Also, I really hope I can post a successful maiden with these 2...

how far back did you put the EDF?
On both planes, in front of the elevons. The motor is inline with the elevons. You can kind of see the largest bulge under the rudder where the edf sits. I probably could have places it a few more inches forward. But we will see how she flys like this...

Also, I finished the thrust tubes and painted it silver. And I painted the inside with very poorly mixed yellow and red paint to look like fire as the plane rips by... and so I hope anyways.

Nope not at all. I used a C of G calculation from the web for Delta wing. My 3s 2200 sits right in the nose with almost 2" of movement to play towards the tail if need be. Now if I had put the edf 2" forward, I may have no where to go with battery positioning. It's just how it worked out. I have 3" moveable room at the moment. I'll snap a pic in a bit to show you.

It turned out awesomely!! Its a rocket, a dart, a speed demon, and slow flight is awesome too. The wind, if strong, will make you think your trims are out. But it's great!!! I love it!!! And to top it off, the FMS 64mm 3s 3900kv 11 blade EDF is super quite and smooth... You can't even hear the thing go by in slow flight... Fast, it screams gently. Haha
