Will a Tri-coptor 'steer' without having a rotor that tilts from a servo? IF so, is this just something that gets set up in the firmware when I set it up? Thanks.....

Hi,
A Tricopter needs three motors and a servo- two motors in front and one in back that tilts left-right via the servo.
You will need to set up your craft as a tricopter on your flight controller.

Y6 can do what you wish but you are trading the 1 servo for 3 more motors/props.
