What do you do if you have gaps between the strips of foam?

You can fill it in. A lot of people like lightweight spackle. I personally prefer lightweight wood filler since it's easier to sand, but it's stiffer which makes it more brittle resulting in good and bad. Also, it's important to reduce the gaps as much as possible.

If the skin is carrying all the load then gaps are a "no no!" Every foam joint must be in contact all the way along the length. or so close the glue still works,
