Motor ramping up

I rescently just stated to get into RC flight. I built the FT storch with the following set up:

Turnigy D2836/8 1100KV Brushless Outrunner Motor
Turnigy 2200mAh 3S 20C Lipo Pack
SF E-Prop 10x4.7 / 254x119.5mm w/ Adapters Black
Turnigy TGY-i6 AFHDS Transmitter and 6CH Receiver (Mode 2)
Hobbyking YEP 30A (2~4S) SBEC Brushless Speed Controller
HXT900 9g / 1.6kg / .12sec Micro Servo

My question is why does my motor seem to ramp up before reaching full power? The instructions with the radio are vague, and I've tried messing with the throttle settings on the radio, no change.

I am not exactly sure what you means by 'ramp up'. What exactly is the motor doing compared to the throttle stick?

Switched to a 40A ESC, calibrated it and no problem, works the way it should...just don't know what's up with the Hobbyking YEP 30A (2~4S) SBEC Brushless Speed Controller that acts like a helo speed control...

Ramping up

Starts to turn like a Helo slowly at first then goes full power with the stick at full throttle...

But the Hobbyking YEP 30A (2~4S) SBEC Brushless Speed Controller is specifically designed for helis with a "super smooth soft start"!
With the optional programming card it can be altered for normal planes.
