It's a little sluggish in the roll, and it definitely like the rudder a lot more in the turns.
They help stop the airflow from separating from the wing, letting the wing sustain lift at higher angles of attack. So yes they help in some stunts, you can just use triangles of posterboard to make them, that's what the plans call for...
