best beginner balsa scratchbuild ?

Mmmmmmm, balsa.
Here's a thread to a style which could be a good first try: http://forum.flitetest.com/showthread.php?6738-Das-Ugly-E-Stick. You mentioned you've been building in foam for a few years so I presume you're comfortable flying and can handle more than a trainer.

What I like about this design is that the tail surfaces and fuselage are all full sheet which simplifies construction for the first build. The wing design is pretty simple as well.

My guess is that you'll still need to buy some balsa as well as some light plywood. The balsa bundle you got will probably take care of part of what you need though.

Have you started acquiring the additional materials you'll need, such as covering, covering iron, etc?

Can you fly a faster aerobatic plane? Then this is a very easy scratchbuild. As you build I can help you with the parts that definitely need some changes from my build. It does fly great though!
